My Recipe for Crock Pot Black Beans

I eat this staple almost everyday of my life.  My secret combination of latch key boy spices makes this humble little dish a must have for any frugal gourmet operating on a below the poverty line budget.

Ingredients

2lbs Black beans

2  chopped white onions

4 tbsp. Ground Cumin

2 Bunches minced Garlic

4Tbsp. Olive Oil

Salt and Pepper to taste

2 splashes balsamic vinegar

1 Green Bell Pepper

Vegetable Stock

I Bay Leaf

Instructions:  Soak beans over night.   Combine all ingredients except black beans and simmer covered on low heat until the onions are translucent.  Add the mixture and beans in a crock pot and cover an inch over with stock.  Add a generous amount of salt.  Cook on low for 12-14 hours.  I like to cook until my beans are extremely tender and crushable with little pressure.  Goes great over quinoa or brown rice.
